It is always a cause for excitement when seeing something new to eat. And in Tescos I came across Eddoes or Taro Root for sale. So it is worth giving these rather lovely things a whirl. They do look a bit like elephant dung, but they have a nice feel, sort of soft and gentle. The easiest thing to do with them is bake them in an oven like potatoes. The skin is inedible. However, they can also be boiled then peeled, sliced and fried in some butter, goose fat or olive oil.
