Spicy carrot salad.

  • 4 very fresh organic carrots
  • a knob of grated fresh ginger
  • 1 chilli, deseeded and chopped into bits.  As hot or as mild as liked.
  • 1 lemon or 2 limes, juice and zest.  The fruit must be unwaxed and organic if possible.
  • Glug of sesame oil or olive oil
  • Pinch of Celtic sea salt.
  • Few raisins.
  • 1 tblspn black poppy seeds – or other seeds, toasted if large.
  • Large handful of fresh coriander, chopped up.
  1. Mix all the ingredients except the honey and coriander.
  2. Leave to stand for upwards of 15 mins.
  3. Just before serving, add the coriander.
